PanSeared Cream Dory Fillet...

Recreating my favourite seafood combo with a simple marinade which is just simply delicious and light on palate.

The star of the dish is the most versatile Fish "Cream Dory" Or Stripped Catfish, being easily available in the market.

It can be  pan seared Or grilled on skewers.

Here is my perfect go-to recipe for this awesome Fish -

Ingredients - 2 Cream Dory Fillets(Cut into 2 equal parts)

For Marinade1 Tbsp crushed garlic cloves | Lemon Juice and zest - 1 | Chili Flakes - 1 Tbsp | Dried Parsley - 1 Tsp  | Olive Oil - 1 Tbsp | one sprig of rosemary

For Cleaning the Fish - Rub the fish gently with salt, vinegar, turmeric(Optional). Leave it for 20 mins. Make sure you do not handle it harshly else the fish will become soggy. 

Wash the fish under tap water. Keep it on a plate and pat dry to remove excess water.

Marinate it with the above ingredients and keep aside for 2-3 Hours.

Heat a non-stick pan. Add 1 Tbsp of oil, spread it evenly.

Place the fillets, Lower the flame to medium low. Let the fish sizzle till it becomes golden brown in color. Gently flip the fish and leave it till you get the same sear. While the fish is getting cooked you can baste the fish with oil and let it cook till well done.. (15 Mins on each side)

Do not overcook the fish, else it will dry out. This is a very flaky fish so make sure you handle it very smoothly.

Once done, turm off the flame and let the fish rest for 10 Mins.

Serve Hot with green salad or of your choice.

Note - I have added Prawns as well and this is completely optional. Upto you..
