I had first tried "Lemon Rice" at the famous Cocos Restaurant in Dubai and since then am being quite a fan of this super delicious citric rice dish.
This delightful delicacy is loaded with citrus in the form of lemon juice and zest(grated lemon rind), salt to taste, oil and butter, some red chili flakes, chopped parsley, long grain Basmati Rice which gives out immense aroma, taking the dish to a whole new level.
The fresh aroma oozing out from the squeezed lemons makes it delicious and quite a crowd pleaser.. Being perfect to serve with grilled chicken, steaks, charred veggies along with yogurt raita as a side.
Super easy to make and comes out together very soon..

Ingredients - ππππ
2-3 Cups Rice | 1 Tbsp Olive Oil | 1 Tbsp Butter π§ | 1 Tsp Red Chili Flakes | 1 Whole Lemon Juice and Zest | 1 Bay Leave | Salt To Taste | Finely Chopped Parsley | Pinch of Saffaron
Instructions - Clean and wash the rice till you get clear water.
Heat oil and butter π§ in a heavy bottom pan. Add Bay Leaves.. Leave it for 5 Mins.
Add in the lemon juice, zest, red chili flakes, one smashed clove of garlic. Stir well and let it cook for 10 mins or till the flavor of garlic is infused in the oil.
Add 3 Cups of water and bring to boil. Add rice and mix well. Bring to another boil on high flame.
Once the water reduces, turn the flame to complete low and cook the rice till completely done.
Garnish with chopped parsley and add a dollop of butter alongwith saffaron threads.
Serve hot.
