#RecipeOfTheDay "Chicken Korma" is a exotic Indian Mughali curry made up with royal ingredients almonds, cashewnuts, being further cooked in Yogurt sauce giving it a super creamy texture to the Gravy.
The base of this gravy is ofcourse Onion Puree, some whole garam masala and ginger-garlic paste, like any other gravy. It taste equally good with any bread and steamed rice. To finish the gravy we add some Ghee as it completely elevates the flavors... Making it super delicious and tempting.
Ingredients -
Chicken on bones - 1 KG | Yogurt - 1 Cup | Ginger-garlic paste - 1/2 Cup | Whole Garam Masala - cloves, cinnamon stick, black cardamom, black peppercorn, Bay Leaves, green cardamom, shahi zeera | 1 tsp Red Chili Powder |Pinch of turmeric(Optional)
FOR GRAVY - Almonds - 1/2 Cup | Cashew Nuts - 1/2 Cup | Dried Or Grated coconut - 3 Tbsp | Coriander Seeds - 1 Tbsp | Onion - 2-3 Medium Size | 2-3 Dried Red chili + 2-3 Green Chilies | Oil for cooking - 1 Cup + 1 Tbsp | Salt To Taste
Instructions - In a pan, roast onions, coriander seeds, almonds, cashew nuts, dry red chili, green chilies with 1 tbsp of oil.
Let it cool down and grind to a fine paste adding water as required.
Clean and wash the chicken completely well.
Heat oil in a heavy bottom pan, add whole garam masala and cook till the aroma blends well.
Add the chicken, stir well. Cook till the water of chicken is released and it is white in color. Add ginger-garlic paste, salt to taste, yogurt. mix well and cook for 15 mins.
Add in the grinded paste, stir well. Cook on medium flame till the chicken is well done and oil separates out.
Drizzle 1 Tsp of ghee, lemon juice and garnish with chopped cilantro, slitted green chilies. Sprinkle 1/2 tsp of powdered garam masala.
Serve hot with Naan and Zeera rice.
