#RecipeOfTheDay is Chicken Banga __A very exotic, unique curry coming straight from the villages of maharashtra state in India. It is made up with special spice mix which is home made and full of aromatic flavors..
Best served with Jawar(sorghum) flour bread. It can be made with mutton as well, but I love it when made of chicken..

Ingredients -
For Banga Masala -
3 Tbsp Bajra(Pearl Millet) | 2 Tbsp Chana Dal(Gram Lentil) | 2 Tbsp Rice Powder | 4 Tbsp Coriander Seeds | 8-9 Bay Leaves | Black Stone Flower | 1 Cup Dried Red Chilies | 2 Tbsp Cumin seeds | 1 Whole Garlic | 1 Dried Onion | Whole Garam Masala | Salt To Taste
For the Curry -
2 Chicken on Bones | 2 Tbsp Ginger-Garlic Paste | 3-4 Tbsp of Banga Masala | 1 Tbsp coriander powder | 2-3 Onions thinly sliced | Whole Garam Masala _ Cloves, Cinnamon stick, Black Pepper, Bay Leaves, Black Cardamom | 3 Tsp Red Chili Powder | 1 Tsp Turmeric | Salt To Taste | 1 Tsp Garam Masala Powder
For Garnish - Chopped cilantro and slitted green chilies
Instructions -
To prepare Banga Masala - Dry roast the Banga Masala ingredients and let it cool down completely. Grind to a fine powder and store in a Air Tight Container.
To Prepare the curry -
Heat oil in a heavy bottom pan and add whole garam masala. Leave it for 5 Mins so that the flavors get blended in the oil.
Add sliced onions and fry till golden brown. Add the cleaned and washed chicken pieces, Cook till the chicken is white in color and all its water separates out. Stir in ginger-garlic paste, salt, turmeric and cook till it partially tender.
Add coriander powder, red chili powder and 3 Tbsp of the prepared Banga Masala(Dissolved in one cup of water). Add enough water to form a curry. (This curry will become thick in consistency so adding excess water is also OK.)
Lower the flame to medium low and let it simmer till the chicken is well cooked and oil separates out.
Garnish with slitted green chilies and chopped cilantro. Add 1 Lemon Juice. Give a random stir.
Serve Hot..
