Chicken in a wok !!!

#RecipeOfTheDay is Chicken Karahi, famous in both India and Pakistan. It is cooked in onion and tomato puree alongwith other basic spices. The key ingredients in this dish is - spice mix made up of coriander seeds, fennel seeds, red chili flakes and ofcourse garam masala, because any dish is incomplete without it.

To make the curry and to elevate the flavors, I have added dried Fenugreek Leaves, Lemon zest and juice. Thus making it super delicious and infinitely tempting..

You can use Bird Eye Chilies to make it extremely hot, if you love it that way.

Best served with hot tandoori naan.

Ingredients

1 Kg Chicken with bones | 1 Cup - Onion Puree | 1 Cup - Tomato Puree |

Spice Mix -- 1 Tbsp - Coriander Seeds, Fennel Seeds and Red Chili Flakes _ Roasted and roughly crushed. | 1 Tsp Garam Masala | 2 Tbsp Ginger-Garlic Paste | Salt To Taste | 1 Cup Cubed  Capsicum and onions |1 Tbsp Kasuri Methi | a pinch of turmeric | 1 Lemon Zest and Juice | Pinch of Shahi Zeera(Black Cumin Or Caraway Seeds) | 1 Tbsp Ghee | 1 Tbsp Ginger - Jullienes | 1/2 Tsp Green+Red chili paste.

Cooking Instructions -

Heat Oil in a Karahi. Add shahi zeera, kasuri methi. Give a quick stir and let it rest in oil so that the flavors are well blended.

Add onion puree, turmeric and saute till it is translucent and pink in color.

Add tomato puree along with ginger-garlic paste. Saute till the oil separates out. Add chicken, red and green chili paste, salt mix well and let it cook till it is tender.

Add in the roasted spice mix powder along with chopped onion and capsicum. Stir well and let it simmer till the chicken is completely cooked.

Sprinkle garam masala powder, Drizzle lemon juice, add in the zest and ghee

Garnish with chopped cilantro, ginger juliennes, slitted green chilies, some more lemon wedges.

Serve Hot with Tandoori Naan and Steamed Rice..

P.S. Make sure you do not over roast the spices else it will become bitter in taste and it will ruin your whole dish.
