So today's #Recipe of the day is Haleem _ a delicious and exotic Main Course dish, originated from Indian City of Nawabs "Hyderabad". It is made with a combination of Mixed Lentils, Some rice, Broken Wheat and simple Mutton Or Beef Stew.
"Simple Mutton or Beef stew" because it is precooked until tender with basic spices i.e. Ginger-Garlic Paste, Turmeric, Red Chili Powder and Salt to taste.
The lentils are soaked in water for good 2-3 Hours before being cooked and mixed with mutton. Soaking the lentils before cooking doubles the Volume(and this is your "Tip Of The Day")
Here's a somewhat close to the original authentic recipe of Haleem for all you readers out there. (Inspired from my Mom's Recipe)
Prep Time - 2 Hours 45 Mins
Ingredients - 1 + 1/2 Kg Meat(Mutton Or Beef) | 3-4 Cups Broken Wheat | 1 Cup Moong Daal | 1 Cup Chana Daal | 1 Cup Rice + 1 Cup chopped onions | Turmeric Powder | 1/2 Tsp Red Chili Powder | 1 Cup Green Chili + Cilantro Paste | Salt To Taste | Whole + Powdered Garam Masala | Oil + Ghee for Cooking.
For serving - Fried Onions, chopped cilantro leaves, mint leaves, chopped ginger, ghee, chaat masala and lemon wedges.
Instructions -
Step 1 - Clean and wash the meat. Keep it a strainer to remove excess water.. Pat dry. Essemble all the ingredients, Keep it ready alongwith a Cup of Coffee.. LOL
Step 2 - Add the meat in a pressure cooker, add chopped onions, turmeric, salt, oil, whole garam masala(Cloves, black cardamom, Green Ilaichi, Black Peppercorn, Bay Leaves) and ginger-garlic paste. Add enough water and close the lid. Cook the meat till 5-6 Whistles on high flame. Reduce the flame and cook for another 15 Mins. Turn off the flame and let the cooker rest. This will release the steam naturally and make the meat more tender.
Open the cooker lid, give the meat random stir, Check the seasoning and keep aside.
Step 3 - Boil the soaked lentils, broken wheat with 1 tsp oil, turmeric and salt(To taste) till well done.(Min 3-4 Whistles)
Once done, roughly mash the cooked lentils, broken wheat.
Take 1 Cup of cooked rice and grind to a fine powder.
Final Step - In a heavy bottom pot, add oil + ghee along with whole garam masala, green chili + Cilantro paste, ginger-garlic paste, Mix well. Add the cooked meat and saute till oil separates out. Stir in the grinded rice and lentils with enough water, Bring to boil.
Reduce the flame and let it simmer. Sprinkle some garam masala powder. add some chopped coriander leaves, mint leaves, fried onions, Drizzle Ghee on top of it.Give a quick stir and cook for another 20 mins. Do a salt taste check. Season accordingly.
Serve hot with chopped cilantro, Mint Leaves, fried onions, lemon juice, chaat masala, chopped ginger and ghee.
