#RecipeOfTheDay is Smoked beef or "Dum Ka Kheema" as people know it. It is made up of ground beef or lamb meat, marinated with wonderful spices and later smoked, before final cooking in oven. The original Dum Ka Kheema recipe might be entirely different, but this is my version.
It is super easy, made with just basic ingredients and some add-ons to elevate the flavors.. It is quite appealing on the palate and indeed a crowd pleaser.
And as mentioned, you can substitute beef with minced lamb meat.
Ingredient - To Marinate - 1 KG ground beef + some fat | 1 Cup Fried Onions | 1 Cup chopped cilantro + green chili paste | 1 Cup roughly chopped mint leaves | 1 Cup Lemon Juice | 1 Pac Shaan Seekh Kabab Masala | Salt To Taste | + Additional red chili flakes | Garam Masala | 1 Cup Oil | 2 Tbsp Ginger-Garlic Paste | (1 Tbsp - Papaya to tenderize the meat)
To smoke the beef - ramekin, coal, ghee
Instructions - Clean and wash the beef. Keep it in a strainer and sqeeze to remove excess water.
Add all the ingredients alongwith the beef and its fat in a bowl, Mix well. Take a small amount of the meat and fry it in a pan to do a taste check. Season accordingly and mix well.
(If using Papaya, then mix it with meat and leave for 3-4 Hours and then add the other spices)
Cover with cling wrap and refrigerate for 8-10 Hours so that the beef soaks up the spice marinade. Spread it in a baking tray, leaving a round space in the center.
Place the ramekin in the prepared center, Heat the coal till red, Put it in the ramekin or steel container placed in the center of the beef. Pour ghee on top it. cover the dish with a lid and let the smoke get infused in the marinated beef for minimum 30 mins. Once the smoke disappears remove the lid and coal piece followed by the ramekin. Strain the leftover ghee in a clean bowl. Pour this ghee over the marinated and smoked beef. Mix well. Cover with aluminium foil.
Preheat the oven at 250 Deg'. Place the beef tray in the center and bake till well done.(Min 35-40 Mins)
Serve hot with onion rings(tossed with some food color, salt, lemon juice and cilantro leaves.), Ginger juliennes and Taftan Or Naan.
Make sure you add some fat as this will make the dish luscious and soft in texture else it will become dry..
