Here's a lip smacking recipe for all you Biryani Lovers out there, which is completely easy to make and will fill your kitchen with a aroma you have never experienced off..
Trust me this recipe is completely irresistible and am sure your loved ones will enjoy every spoon of it.
Instructions - 1 Kg India Gate Basmati Rice | 1 1/2 Kg Chicken | 2 Tbsp Ginger-Garlic Paste | 1 Tsp Red Chili Powder | Salt To Taste | 1 Cup Yogurt Whole Garam Masala (Green Cardamom, Black Cardamom, Cloves, Black Pepper, Cinnamon Sticks, Bay Leaves, Shah Zeera) | Garam Masala powder | Oil for cooking
Plus extra whole onions, ginger, garlic, whole garam masala, green chilies, half lemon and its juice for cooking rice.
For Garnish - Fried Onions, chopped cilantro, slitted green chilies and loads of mint leaves. Lemon Juice, Saffron threads, Orange/Yellow food coloring.
Instructions :-
Part 1 _ For Cooking Chicken -
1. In a wok, heat the oil, add onions and fry till golden brown and crunchy in bite.
Remove it and keep aside on kitchen paper towel till all the oil is soaked.
2. In the same oil add whole garam masala along with the chicken. Cook till the chicken is white in color. Stir in ginger garlic paste, salt, yogurt and cook till chicken is semi tender.
3. Garnish the chicken with half of the chopped coriander leaves, mint leaves, slitted green chillies, stir in lemon juice and one teaspoon of garam masala powder, red chili powder.
Part 2 __For cooking Rice :- In a big saucepan, add enough water and let it boil till you get bubbles. To this add salt, whole garam masala along with Shah - jeera, onion, ginger garlic, green chillies lemon juice and left over lemon.
Cover the lid and bring to boil. Add the rice, Stir well and cook till the rice is partially cooked.
Drain the rice and keep aside.
Garnish with chopped coriander leaves, mint leaves, 1/2 Cup of fried onions, slitted green chilies and orange food color dissolved in warm water or mixed with lemon juice.
In the same saucepan, spread a layer of rice followed by a layer of chicken. Repeat the process till you get final layer of rice on top. Sprinkle chopped coriander leaves, chopped mint leaves, slitted green chilies, fried onions.
Using a knife make a big hole in the center of the rice-chicken layer and pour the left over chicken gravy.
Pour ghee around the corners of the saucepan. Cover the lid and cook till the steam comes, lower the flame and cook till soothing aroma comes out and the rice is completely cooked.
Serve hot with Raita(Yogurt, Grated Cucummber, Grinded Cumin, coriander and mint leaves) Add salt just before serving.
