Another classic cake ... too simple to make. Perfect to accompany with Morning Tea Or Coffee, even as a snack Or takeaways at work place..
Here's a list of required ingredients - For PineApple Base -
1/2 Cup Brown Sugar | 1/2 Cup Melted Butter | 1/2 Tsp Lemon Juice | 4-5 PineApple Slices | 4-5 Red Cherries(Optional)
For the Cake - 100 GM Butter_at room temperature | 1 Tsp Vanilla Essence | 8oz Castor Sugar | 5oz Milk Or ButterMilk | 12oz All purpose flour | 1/4 Tsp Baking Soda | 1/2 Tsp Baking Powder | Pinch of Nutmeg | Pinch of Cinnamon | 3 Eggs_at room temperature | 1/2 Cup of Crushed Almonds/Walnuts for some crunch.
Ramekins for Individual Serving..
Method - step 1 - Preheat oven at 180 Deg. Butter & Sugar the ramekins.
Step 2 - In a sauce pan, melt butter and brown sugar with constant stirring so that sugar does not burn. Add few drops of lemon juice. Pour it in the prepared ramekins.
Step 3 - Arrange pineapple slices on top of the prepared syrup with red cherries in the center. Keep aside.
To Prepare Cake Batter - In another mixing bowl, cream together butter and sugar till creamy. Add in eggs one at a time and beat on high speed using a electric hand mixer.
In another bowl, Sift together all the dry ingredients together.
Add this mix in the egg-butter mixture alongwith the remaining wet ingredients.. Gently fold in twice using a Spatula.
Whisk on high speed clock-wise to make the batter thick and creamy.
Once done, pour it in the ramekins with pineapple. Add in crushed almonds/walnuts and give a random stir.
Gently tap the skillet to remove excess Air.
Place the ramekins in a baking tray. Keep it on the center rack and Bake till a inserted tooth pick comes out clean.
Let it rest for a while.Pass a knife around the corners of the ramekin to loosen the cake. Place a plate(Upside down) on top of the ramekin. Gently flip it upside down. Tap the ramekin with your hand to release the cake. Serve with whipped cream.
