Weekend Special _ Sabudana Vada (Tapioca Patties)

Sabudana Or Tapioca Sago seeds is basically prepared from the milk of Tapioca Root.  The tapioca seeds is considered very healthy and is pretty much filling. 

It is staple food for many families in Indian State "Maharashtra". For the best results and perfect taste you need to soak it in water for min 8 Hours Or preferably overnight.

Today's weekend special recipe is Sabudana Vada _ common street food in my home town "Aurangabad", super easy to make, delicious and perfect to accompany with tea. 

Ingredients - 2 Cups Boiled and grated potatoes | 1 + 1/2 Cup Soaked Sabudana | Salt To Taste | 2-3 Crushed Cloves of garlic | 1 Tsp Cumin Seeds | 1/2 Cup Roasted and de-skinned Peanuts _ Roughly grinded | 1 Tsp Coarsley Grinded Green Chili (In a mortar and Pastel) | A pinch red chili flakes | 1/2 Tsp Chaat Masala | 2-3 Sprigs of Curry Leaves(Finely Chopped) | A pinch of Sugar | Oil for frying

To Serve - Yogurt Mint dip

Instructions - Mix together all the ingredients and make small balls.

Rub oil in between your palms and flatten the vada balls. Place them in a a plate and refreigerate for 30 Mins so that they become hard and it will be easy to fry.

Heat oil in a Kadhai on medium flame till it very hot.

Deep fry the vadas till well done. Put all the fried Vadas on a paper towel so that it soaks up excess oil.

Serve hot with yogurt mint dip Or Tomato Ketchup.
