Carrot cake is another classic dessert which is light on palate and loved by everyone. It can be perfect for a Birthday Cake if you want something unique and special then the regular chocolate or blackforest cake Or Pineapple Cake.
This carrot cake is super moist because of the carrots, spicy on the palate as there is nutmeg, cinnamon, layered with cream cheese frosting.
Here is my go to recipe for you Carrot Cake Lovers out there.
Prep Time - 25 Minutes | Cook Time - 30-35 Mins
For the Cake -
12 Oz All Purpose Flour | 6Oz Castor Sugar | 100 GM Melted Butter or 1+1/2Cup Oil | 3 Eggs | 2 Tsp Baking Soda | 2 Tsp Baking Powder |1 Tsp Vanilla Essence |2 Tsp Cinnamon Powder | Pinch Of Nutmeg | 2 Cups Grated Carrots | 1 Cup Roasted and chopped walnuts + Additional | 1 Tsp Grated Ginger(Optional) | 1 Cup Crushed Pineapple Or coconut flakes
Instrutions - Preheat the oven at 180 Deg' for 20 Mins.
Take 2 x 9'13" baking trays and line it with parchment paper, greasing the sides with non-stick cooking spray. Keep aside.
Take 2 Mixing Bowls, in one bowl add all the wet ingredients and whisk until just well combined.
In another bowl, sift together all the dry ingredients and add it in the wet ingredients along with the grated carrots.
Using a spatula mix well so that everything is well combined.
Divide the batter into the prepared cake tins. Tap gently to remove excess air.
Place it on the center rack and bake till a inserted toothpick comes out clean.
Once done, remove the cake tin from the Oven and let it cool down completely.
Prepare the Frosting -
Ingredients - 1 Stick of Unsalted Butter
2-3 Pacs of 8Oz Philadelphia Or Almarai Cream Cheese @ Room Temperature
1 Tsp Vanilla Essence
1 1/2 Cup Powdered Sugar
Method - In a mixing bowl, cream together butter, cream cheese and sugar till thick and creamy in consistency. Add vanilla essence and mix well. Refrigerate till the cake cools down.
To essemble - Place one cake layer on the cake stand. Using a spatula, spread half of the frosting evenly. Put the 2nd cake on top of it and spread remaing frosting evenly.
Sprinkle additional walnuts at the border of the cake. Refrigerate the cake for 4-5 Hrs to let the cream cheese set.
Serve it chilled with Hot mug of coffe. It is ideal for breakfast and evening snacks as well.
