Hyderabad weddings are world famous and so is their royal dessert of Qubaani Ka Meetha _ made up of Soaked Apricots. It is rich, exotic, delicious, most loved and so good flavor wise that you can definetly call it as "King Of Desserts"... A perfect treat for everyone. And needless to say this one is also my family favourite.
Ingredients -
1 Kg Dried Apricots | 2 Cup Water | 1 Cup Castor Or super refined Sugar | Few Strands of Saffron | A pinch of salt to elevate the flavors
For Garnish - Chopped Almonds & Pistachios || To Serve - Fresh cream and chilled Custard.
Instructions -
Wash the apricots. Soak it overnight in water.
Next day, strain the apricots and de-seed them. Preserve any excess water.
Add the de-seeded apricots in a sauce pan along with sugar, pinch of salt and the preserved water. You can add more water if required, just enough to cover up the apricots.
Give a random stir and let the apricots cook at medium flame to melt the sugar.
Keep on stirring randomly.
Crush the Saffron strands and sprinkle them on the apricots. Give a quick stir and let it simmer for another 15 Mins. Garnish with Almonds & Pistachios
Once done, turn off the flame. Bring the cooked apricots to room tempeature.
Chill them before serving with Custard and fresh cream..
