This is my all time fav' snack recipe which I love to have as breakfast or midday snack, Ideal for iftar parties as well.
Just a handful of ingredients is required to make this. You can also call it as "Bread Pizza", but according to me calling it as Floating Cheese Toast will be more elegant and classy.. LOL
Ingredients - 6 Slices of bread | 1 Cup Pizza Sauce | 1 Cup Chopped onions | 1 Cup Frozen Corn | 1 Cup Chopped Green Capsicum | 1 Cup Shredded Chicken(Seasoned with spices of your choice_ I have used leftover fried chicken, spiced with Natco's Tandoori Masala) | 1 Cup Knor's Chili Mayo | 1 Tsp Dried Parsley | 1/2 Cup Sliced Black Olives | Grated Cheddar Cheese | Oregano | Red Chili Flakes.
Instructions - Preheat the oven for 30 mins. This will give the bread a crunchy texture.
In a bowl, add all the veggies, chicken, mayo, half of the dried parsley. Mix well
Line a oven tray with aluminium foil. Place the bread slices evenly on the prepared tray. Spread pizza sauce followed by the mixed veggies/chicken mixture on each bread slice.
Grate the cheddar cheese equally on each slice. place 2-3 Olives, sprinkle oregano, red chili flakes (optional).
Season with salt if required.
Place the tray in preheated oven and bake till the cheese is completely melted and slightly golden brown in color.
Serve immediately to enjoy the crunch..
