BlackPepper Mutton Stew

This one is straight from my grandmother's kitchen which is so easy to make with just basic ingredients.

Ingredients

1 Kg Mutton(On Bones) | 1 Cup chopped onion | 1 tbsp Ginger-Garlic Paste | 1/2 Tsp Turmeric | 1 Cup Yogurt | Whole Garam Masala _ Cloves, Black Peppercorns, 1 Small Bay Leaves, Black Cardamom, 1 Small Cinnamom Stick | Salt To Taste | 1 Tbsp Black Pepper Powder Or freshly crushed. | 1 tsp powdered garam masala | 1/2 Tsp Crushed Dried Fenugreek Leaves

For Garnish - chopped corainder and slitted green chilies, lemon juice

Instructions - Marinate the mutton with all the ingredients accept oil and onions.

In a pressure cooker, add oil and heat it.

Once the oil is hot, add onions and saute till transulucent. Add marinated mutton and saute till tender.

Close the cooker lid, and let the mutton cook on medium high flame for 2-3 Whistles.

Lower the flame to complete low and cook for another 5 mins.

Turn off the flame and let the cooker rest for a while to release the steam naturally. This will make the mutton to remain smooth and chewy in texture.

Open the lid, saute on low flame till the oil separates out and mutton is completely tender.

Drizzle lemon juice, sprinkle some powdered garam masala, garnish with chopped coriander, slitted green chilies and dried fenugreek leaves.

Serve hot with steamed rice.
