Am here to take you on a roller coaster ride with this home made version of the famous Nandos Peri Peri Sauce. It is made up of African Bird eyes chili and is extremely spicy, high on flavours, perfect for marinates and can also be used as a dip.
It has onions, dried oregano, vinegar, garlic, smoked paprika, salt, olive, oil, red bell peppers, garlic and ofcourse African Bird Eye Chilies.
3 Red Bell Pepper (Chopped) | 1 Cup Onion (Chopped) | 1/2 Cup African Red Chili | 10-12 cloves Garlic | 1 tbsp Paprika | 1- 2 tsp Green Chilli | 1/4 cup White Vinegar | Salt To Taste | 1 Cup Olive Oil | 1 tbsp Dried Oregano | 1 tsp Lemon Zest + 1 tbsp Lemon Juice
Instructions - Add all the ingredients in a mixing bowl. Mix well. Transfer it on a roasting pan, lined with aluminium foil. Drizzle olive oil. Sprinkle some oregano and dried parsley.
Roast it in a preheated oven for 20 Mins.
Once done remove the pan and let it cool down completely.
Transfer it to a blender and blend to a fine paste.
Pour the prepared sauce in a air tight containerr or bottle and store in a cool place.
How to use it - Clean and wash the chicken thighs. Make deep cuts on it using a sharp knife. Marinate it with the prepared sauce and refrigerate over night.
Grill it till well done.
Serve hot with mashed potatoes, grilled vegetables.
