#Recipe of the day is "Whole Spiced Mutton Curry", being made up of spices that are coarsely grinded or finely chopped. This dish is very much famous in Uttar Pradesh(Northern state of India) and is always there on our Eid Menu.
It is complete crowd pleaser and simple to make with day to day pantry freindly ingredients. The flavors are fresh on the palate, goes well with steamed rice and plain yellow lentil.
Ingredients - 1 KG Mutton |
Spices -: 2-3 Cloves of garlic | 1 Inch Ginger | Whole Garam Masala (Shah Zeera, Cloves, Black PepperCorn, Black Cardamon, Bay Leaves, Cinnamon Stick), Red & Green Chilies, One Lemon Zest & Juice. | Oil for Cooking & Salt to taste. Chopped Cilantro for garnish.
Instructions -
1. Clean and wash the mutton. Trim of the fat from the meat.
2. Coarsely grind all the spices Or crush them in a mortar and pastel(accept Shahi Zeera).
3. Heat Oil in a cooker. Add in Shahi Zeera, Cinnamon Stick and Bay Leaves and cook for 5 Mins.
4. Add in the Mutton and cook till the water separates out.
5. Stir in the grinded spices and cook the mutton till it soaks up all the spices. Add in salt.
6. Close the cooker lid and pressure Cook upto 2-3 Whistles. Once done, keep the cooker closed and let the meat set and cook further in the steam enclosed in Pressure Cooker. Once the steam is released naturally, open the lid.
Saute the meat on medium low flame till the mutton is completely cooked and oil separates out. Stir in the Lemon Zest and Juice. Mix well, Garnish with coriander.
Serve hot with steamed rice, flat bread.
Note - Use of cinnamon, will add a sweet taste to the curry. Thus making it a sweet and tangy savoury dish and to balance the flavors right.
You can also add a pinch of Kasuri Methi to elevate the taste.
