Another comfort food is definetly "Vegetable Pulao". It is my favourite go to dinner dish when i am in no mood of cooking lengthy meals...
Ingredients - 3-4 Cups of Basmati Rice | 1 bowl of mixed vegetables _ French Beans, Carrots, Green Peas, Potatoes, Cauliflower | 1 Cup Chopped Tomatoes(Optional) | 1 Cup Sliced Onions | 1 tbsp Ginger-Garlic Paste | 1 tsp red chili powder | A pinch of turmeric | Salt to taste | 1 Cup Yogurt
Whole Garam Masala _ Cloves, Cinnamon Stick, Bayleaves, Black Cardamom, peppercorns.
Oil for cooking
For Garnish(both rice and vegetables) - chopped cilantro, slitted green chilies, lemon juice, red+orange food coloring, fried onions
1 tbsp Ghee
Instructions -
Clean and wash all the vegetables. Chop into bite size pieces.
Heat oil + ghee in a wok and saute whole garam masala for 5 mins. Add in all the vegetables and cook till semi-tender on medium low flame..
Add in turmeric powder, ginger-garlic paste, yogurt and salt to taste. and cook for another 15 mins so that the uncooked aroma of added spices goes away.
close the flame, Sprinkle red chili powder on the cooked vegetables with 1 tsp of garam masala powder. Garnish with chopped cilantro, slited green chilies and fried onions. Drizzle lemon juice.
To prepare rice - add water in a heavy bottom pan and bring to boil.
While the water is getting ready, prepare a etius in a muslin cloth with 1 small onion, some cloves of garlic, one inch piece of ginger, 2-3 green chilies, whole garam masala, shah zeera, and one leftover lemon(divided into two parts) after taking out the juice.
Tie the knots to form a potli and put it in the pan of boiling water. Cover the lid and let it boil for another 5 mins.
Add soaked rice and cook till el dente. One done, drain it and keep aside in a big bowl
Season with salt if required, add soaked food color, some chopped cilantro, few mint leaves, green chilies, 1/2 tsp of garam masala.
Layer the rice in the same pan or pot in which rice was cooked. spread the vegetables to form the 2nd Layer.
Repeat the steps till you get 3 Layers and final layer is of rice.
Make a whole in the center and pour the leftover gravy. Pour ghee across the corners of the pot. Garnish with fried onions and remaining chopped coriander and mint leaves.
Poke slitted green chilies in the rice. Close the lid and cook on high flame to generate the steam. Once the steam comes out, reduce the flame on low and cook further till the rice is completely cooked.
Do not open the lid else all the gathered aroma will evaporate.
Using a serving spoon, loosen the sides and Serve Hot with raita.
