Chicken Pulao

#RecipeOfTheDay Or Weekend special is Chicken Pulao, a complete comfort food which can be made within an hour with just basic ingredients..

Ingredients  - 1 KG Chicken on Bones | 1 KG Basmati Rice | 1 Cup Sliced Onions | 1 Tbsp Oil | 1 Cup Yogurt | 1/2 Cup roughly grinded green chili + cilantro | 2 Lemon Juice | Salt To Taste | Whole garam masala - Cloves, cardamom(green and black, Bay Leaves, Cinnamon Stick, black cumin) | 1/2 Cup chopped cilantro | 1/2 Cup Mint Leaves | Pinch of red chili and 1/2 Tsp Powdered garam masala. Pinch of Kasuri Methi(Dried Fenugreek Leaves)

For Garnish -  Chopped Cilantro/Green chilies/mint leaves.

Instructions

1. Clean and wash the chicken. Trim off the excess fat, rinse again under tap water. Keep aside in a strainer to remove excess water.

2. Wash the rice till you get crystal clear water and soak it in 3-4 Cups of water.

3. Heat 2 Tbsp of Oil in a wok/heavy bottom pan. Add in whole garam masala, black cumin and pinch of Fenugreek Leaves.. Give a random stir.

4. Add in 1 cup of chopped onions. Cook till golden brown.

5. Add chicken and cook till the chicken is white and has released all the water. Add in ginger-garlic paste, salt, yogurt. Mix well and let it simmer till the oil separates out. Stir in half cup of green chili and cilantro paste/puree, pimch of red chili and lemon juice.

6. Add soaked rice with additional water(if required). Season with salt(as per taste). Give a good stir to make sure everything is well combined.. Cover with lid and cook till both chicken and rice are completely cooked through. Garnish with chopped cilantro, slitted green chilies and mint leaves.

Serve hot with yogurt raita and fresh salad and Boiled Eggs 

Note - Do a taste check for salt before serving..
