Portuguese Chicken🐓🐓🐓
Ingredients -
1 whole chicken cut into 5 Pcs 🍗🍗🍗🐓🐓🐓
For Marinade -
1 Cup - Olive Oil 🍾🍾
1 Tbsp Red Chili Flakes (Optional)
1 Tsp Smoked Paprika
1 Tsp Red Chili Powder 🌶🌶
1 Tsp Green Chili Paste
Salt To Taste 🧂
2-3 Lemon Zest and Lemon Juice 🍋🍋
2-3 Bay Leaves
1 Tbsp Minced Garlic 🧄
For Sides - Veggies - 🧅 🥔 🥦 🥕 , Pilaf Rice
Instructions - Clean and wash the chicken thoroughly. Keep it on a plate and pat dry to remove excess moisture. Using a sharp knife, make deep cuts on the chicken.
In a bowl, add all the marinade ingredients and mix well to form a paste.
Marinate the chicken with this mixture and refrigerate over night. This will allow the chicken to soak the marinade well.
Preheat the oven at 250 Degree. Grease a baking tray with oil.. Lay off onions, potatoes, carrots, bell peppers(all chopped into wedges). Season with salt and pepper. Drizzle olive oil.
Place the chicken on top it. Drizzle with olive oil and bake till well done.(165 Deg' internal temp | Cooking Time - 30-35 Mins)
You can either BBQ or grill the chicken as well.
Drizzle Lemon Juice once done and serve hot.... 🍽🍗

Recipe For Pilaf Rice -
Ingredients -
3 Cup Basmati Long Grain Rice | 3 Cup Chicken Stock (Maggies Stock Cubes) | Olive Oil for cooking | 1 Tbsp Ginger-Garlic Paste | 1 Cup Tomatoes | Red Chili Flakes | Red Chili Powder | Chopped Cilantro | 2-3 BayLeaves | Pinch of turmeric(optional)
Instructions -
Heat oil in a wok.
Add minced garlic, onions, tomatoes and bay leaves..
Saute till translucent. Add in the the chicken stock and bring to boil.
Add soaked rice and mix well to combine everything. Cook on high flame till the rice is tender and the stock is reduced. Taste and add salt, if required.
Cover with lid and let the rice get cooked till well done. Garnish wih chopped cilantro and slitted green chilies.
Serve Hot
