Besan Ke Laddu...

    So today I finally kept all my fears at bay and tried making the, the Indian Sweet "Besan Ke Laddu", which is very famous all over India. It is made in every household next door specially during the festive seasons.. These delicate balls are full of flavours, crunchy in texture and will melt in your mouth..

Perfect to munch on during winter seasons as well. 

   The key ingredient is finely powdered Gram Flour(Bengal gram lentil) or Besan as commonly known in Hindi, thus called as "Besan Ke laddu".. It is roasted in Ghee till dark golden in color and starts giving a soothing aroma. Finished with cardamom powder and coarsely grinded dry fruits like almonds, pistachios and cashewnuts.

You can also add semolina, but then that is completely optional. People do add FoxNuts(Makhane) and edible gum(Gond) as well but I have omitted it as I have never worked with them..

I had never thought it will be so easy to make this if you follow the correct steps in making it.. 

Here's the recipe for all you wonderful readers out there - 

Prep Time - 1 Hr  30 Mins 

Cuisine - Indian

Course - Desserts

Ingredients

2 + 1/2 Cup Bayara Gram Flour 

1 + 1/2 Cups Powdered Sugar

1 Cup Amul Pure Ghee(Clarified butter)

1/4 Cup Green Valley Semolina (Optional)

1 Cup Mixed Bayara Dry Fruits (Almonds, Pistachios, CashewNuts)

1/2 Tsp Bayara Cardamom Powder

 

Equipment - Wooden spatula, Non-Stick Kadhai, a Sheen Or a bowl to transfer the prepared Laddu Mix.

Instructions - Heat a nonstick kadhai on complete low flame. Dry roast the semolina till light brown in color. Once done remove it in a plate and keep aside.

In the same kadhai add ghee and gram flour. Using a wooden spatula, mix it immediately so that there are no lumps formed. Slow roast till the flour starts changing its color and you get semi-liquid consistency.

Stir in coarsely grinded dry fruits, roasted semolina and cardamom powder. Mix well and continue stirring it for another 30 mins OR till the Gram flour mixture is dark golden yellow in color and you get a sothing aroma. (Note - Adding semolina will give the laddus grain like consistency)

Turn off the flame, transfer the mixture to a bowl and let it cool down completely before you add sugar, else it will melt and you will not be able to make smooth balls.

Add powdered sugar(one spoon at a time), gently mix it together. Take small portions and lightly roll them between your palms to make tight balls. Coat them in powdered sugar and keep it a air tight container.

You need

Roast the flour

Once roasted, transfer it to another sheen and let it cool down

Add sugar and mix well.

Give them the shape of ladddus and coat with icing sugar
