Baked Pudding 🍮🍮🍮
A perfect go-to desert recipe for any gatherings with family or friends. A very classic dessert, which will melt in your mouth in every bite.
Ingredients - For The custard -- 1 Tin of Nestle Condensed Milk, water and Plain Milk(At Room Temperature) | 7 Eggs | 1 Tsp of Vanilla Essence | And some Caramalized Sugar for the base.
Instructions - In a mixing bowl, add all the custard ingredients and beat on a high speed using a electric hand mixer. You can whisk on high speed till bubbles are formed and everything is well combined.
((Make sure the eggs used are fresh... to check if the eggs are fresh, break one egg at a time in a separate bowl. If the yolk breaks then the egg is not fresh.))
To prepare the Base Sauce - In a saucepan, add 1 Cup of Castor Sugar and melt it on completely low flame with constant stirring. Once the sugar is melted, switch off the flame and keep the saucepan aside. This is your caramalised sauce for the base.
To essemble - Spoon out the caramel sauce in each ramekin and gently tap it to spread the sauce.
Pour the prepared custard in each ramekin. Tap it again to remove the excess air.
If you see any air bubbles, gently push it down using a toothpick.
Take a rectangular baking dish, Fill it halfway through with boiling water. Place each ramekin in the dish.
Let it rest till your oven is getting Preheated(for about 30 mins). Place the baking dish on top rack and bake till well done.
This will take at least 1 Hr. 45 Min. to be completely baked... so you need to have patience... LOLzzz
Insert a toothpick in the center to check if the pudding is done, If not, then reset the timer and bake for another 15-20 mins.
Once done let it cool down completely. refrigerate overnight to completely chill it.
To serve - Using a knife, loosen the sides of the ramekin. Put a serving plate on top of the ramekin. Make it upside down without moving it.gently tap it so that the pudding is released on the plate.(As shown in the attached pic)
P.S. would suggest to use fresh Vanilla beans for the most exoctic flavor. This desert is divine in itself and my family favourite.
Serve Chilled.
