Alu Ki Kalonji

 

"Alu Ki Kalonji" is  another amzaing recipe, This is our family favourite and often there on Eid Menu, served with Pooris.

It is full of aromatic flavours.

Ingredients - 5-6 Baby Potatoes |  1 Cup Roasted Achar Masala | 1 Tsp Amchur Powder | 1 Tsp crussed garlic | Oil for cooking

For Garnish - Chopped Cilantro and slitted green chilies

Instructions - Peel off the skin of the potaoes. Wash and pat dry using a Kitchen Towel.

Cut each potatoes half way through into 4 equal parts, leaving behind the bottom attached.(Just like how you slit for Bagara Baigan)

Using a tsp fill the achar masala in the potatoes and keep aside.

Now heat oil in a kadhai, add some hing and saute it for 1 min. Add chopped garlic and saute for another 5-6 mins.

Add in the filled potatoes , amchur powder, left over achar masala and cook till well done.

This needs to medium low flame else the potatoes will break.

Adjust the seasoning, garnish with chopped cilantro and slitted green chilies.

Serve hot with fried puries or parathas.
