Mixed Veg Stew

Ingredients - 1 Cup Potatoes | 1 Cup EggPlant | 1 Cup Tomatoes | 1 Cup Green Capsicum
Spice - Mustard Seeds, Cumin, Carom Seeds, Curry Leaves, Coriander Seeds, Fenugreek Seeds. dry red chilies, crushed garlic/ginger. | Salt To taste | Turmeric Powder | Mango Powder. Oil for cooking
For Garnish - Chopped Cilantro, Slitted Green Chilies
Instructions - Heat oil in a wok/kadhai.
In a bowl, add 1/2 Tsp of mustard seeds, cumin, coriander seeds, carom seeds, fenugreek seeds along with crushed ginger/garlic, dried red chili and curry leaves.
Put this spice mix in the oil and stir to mix well. Add chopped potatoes, eggplant and saute till it is translucent. Add pinch of turmeric powder, 1/2 Tsp Ginger-Garlic Paste and 1/2 Tsp of red chili powder OR coarsley grinded green chili.. Mix well and cook on low flame till both are cooked partially.
Add chopped tomatoes and capsicum.
Season with salt and cook till all the veggies are completely cooked. Stir in mango powder, garnish with chopped cilantro and slitted green chilies.
Serve Hot with Yellow Lentil and Steamed Rice.
