Parmesan Crusted Chicken Fillets

My go to dinner recipe for those busy weekdays and when I am in no mood of cooking, is "Parmesan Crusted Chicken Fillets, served with some Mushroom Sauce. As a side you can also add some Steaamed veggies like Brocoli florets, baby carrots and bell peppers.
Ingredients - Chicken Fillets | 2 Eggs | All Pupose Flour | 1 Cup Bread Crumbs mixed with Parmesan Cheese and well seasoned with salt, pepper, cayenne pepper and dried parsley.
For Mushroom Sauce 🍄🍄 - Button Mushrooms, Balsamic Vinegar, Salt to taste, chili flakes, Cooking Cream, chopped spring onions, Worchestire Sauce, chopped parsley
Olive Oil for cooking
Instructions _ To make Chicken - Take 3 Bowls, add eggs(whisk it) in one and flour in the other. Use 3rd Bowl for Bread Crumbs and Parmesan cheese, seasoned with salt, cayenne pepper/chili flakes and lemon zest, dried parsley.
Take chicken breast pieces, wash it and pat dry. Divide the breast pieces into 2 parts, length wise. Keep it in between cling wrap and flatten it with a meat mallet to get a flat fillet.
Coat the chicken fillet with flour, tap to remove the excess, dip in eggs, Repeat and give the final coating of Parmesan Cheese Mix. Do the same step for all the fillets.
Heat oil in a skillet, Place the fillets and let it cook till you get golden crust and chicken is half cooked. Gently flip it over and let it cook completely, till you get golden sear.
To cook mushroom sauce - Heat olive oil in a sauce pan, add finely chopped mushrooms and saute it till tender. Then add chopped spring onions followed by balsamic vinegar, worchestire sauce, fresh cream. Let it simmer, once it starts to show bubbles add in parsely, season with sea salt and chili flakes. Cook till the sauce thickens.
You can first prepare the sauce and then the chicken fillets.
To Serve - Place the cooked fillet in the center of a serving plate. Pour the mushroom sauce over it. Keep grilled/steamed veggies(seasoned with salt, chili flakes, lemon 🍋🍋 juice) Or Herb crusted Potato wedges and serve.
