Sharing my go to "Lamb Roast" recipe which is super delicious, moist, juicy and tender. Full of flavours and very easy to make.
Ingredient - 1 Leg of Lamb(weigh - 3 Kgs | 3 tbsp Ginger-Garlic Paste | grinded red and green chili , a bunch of cilantro | 2 Lemon Juice | 1 Kg Yogurt | Salt To Taste | Grounded Cumin + Coriander Seeds | Oil for Cooking.
Instructions - Wash and clean the leg of lamb. Pat dry with a kitchen towel.
Using a sharp knife, make deep cuts in the meat and keep aside.
To prepare the marinade -
In a big bowl, add all the ingredients and mix well to combine everything.
Season with salt as required. Add the leg lamb and coat it completely with the marinate.
Cover with a cling wrap and refrigerate over night for the best results.
Heat oil in a pressure cooker, add whole garam(cloves, cinnomon stick, black peppercorns, bay leaves, and black cardamom)
Cook for excactly 5 mins so that the aroma of whole spices get well blended in the oil.
Add the marinated lamb along with all the leftover marinade. Add little water if required.
(you can divide the lamb into two equal pieces, if your pressure cooker is small in size and lamb leg does not fit in it).
Close the cooker lid and let the meat cook for min 4-5 whistles on low flame so that nothing gets burnt.
Turn off the flame and let the cooker rest to remove the steam naturally. Open the lid and let it rest for another 15 mins.
Now heat oil in a wok, and shallow fry the cooked meat till completely tender.
Garnish with chopped cilantro, slitted green chilies, sprinkle lemon juice and powdered garam masala.
Serve hot with Steamed Rice/Peas Pulao or Khapsa Rice, some fresh salad and a glass of Pepsi or Thumps-Up... HAHA
