I love citrus in any form and this "Lemon Cake" is just a small reflection of it, which is full of flavors and so light on the palate that it will just melt in your mouth.. Go and give it a try as the ingredients used are just the basic ones and you will love making it.
Being super delicious, light on palate and having melt in your mouth texture, this will indeed be a crowd plaser in your next Kitty Party.
So freaking perfect for holidays, gettogether with family and friends, BBQ nights and so on. And they taste too good without frosting as well..
How to make these gorgeous "Lemon Cup Cakes"
You need some basic ingredients like Flour, Sugar, Baking Powder, Baking Soda, Milk, Eggs, Butter and loads of Lemon Juice and Zest(Grated lemon rind)
Ingredients
1/2 Cups + 1Tbsp Granulated Sugar | 2 Eggs @ Room Temperature | 100gm Amul Butter | 1+1/2 Tsp Baking Powder | 1 Tbsp Lemon Juice + 1 Tbsp Lemon Zest | 1+1/2 Cup Al Baker All Purpose Flours | 1 Tsp Vanilla Essence | 1/2 Cup Milk | 1/4 Tsp Baking Soda
Instructions
Step 1 - Preheat oven at 180Deg' for 30 Mins. Line a muffin pan with muffin liners and set aside.
Step 2 - Prepare the batter - In a mixing bowl, cream together butter and sugar until thick and light in color, Add in eggs(one at a time) and beat at medium speed till thick in consistency. Stiff in the dry ingredients along with milk and gently fold in together to combine everything. Again beat on high speed till you get thick creamy cupcake batter..
Stir in the Lemon Juice and Zest and gently fold in using a spatula.
Do not over mix else the batter will turn into bread mix.
Step 3 - Using a icecream scooper, scoop out the batter in the prepared muffin pan. Or simply pour it in a greased loaf pan, lined with parchment paper.
Step 4 - Gently tap the pan to remove any excess air.
Place the muffin tray on the center rack of the Oven and bake till a inserted toothpick comes out clean.
Once the cake is baked, remove the tray from the Oven and let the cupcakes rest to cool down.
For Frosting - 1 Cup Confectionery Sugar + 1 Cup Lemon Juice + some Zest + 1 Cup Whipping Cream
Add whipping cream in a bowl and whisk on high speed till the cream thickens.
Add the icing sugar and lemon juice and mix well until well combined. Refrigerate the frosting till it is firm and thick in consistency.
Frost them on the cupcakes and sprinkle some more Lemon Zest on top of it.
