Coffee CupCakes !!!!

If you love coffee and cakes then you are going to love these coffee cupcakes.. It is super moist, delicious, laced with coffee. Perfect to accompany with morning coffee.
Ingredients - For Cake Batter --
2 Cups All Purpose Flour | 2 Eggs @ Room Temperature | 1 Cup Warm water | 3 Tbsp Davidoff Espresso | 1 Cup Castor Sugar | 1/2 Tsp Baking Powder | 1/4 Tsp Baking Soda | 1 Tsp Vanilla Paste | 5 Oz Milk | 3 Tbsp Cocoa Powder | 1/3 Cup Vegetable Oil / Melted Butter | Pinch Of Salt
Instructions - Preheat oven at 180Deg' for about 20 Mins. Line a muffin tray with cupcake liners and set aside.
Step 1 - Prepare the cake batter - Take 2 Bowls
Add all the wet ingredients along with the eggs in 1st bowl, Whisk together to combine everything .
In 2nd Bowl, sift together all the dry ingredients and mix well.
Add the wet ingredients in the dry mix and gently combine.
Using a electric hand mixer, cream the mixture till everything is well combined and the mixture is thick in consistency.
Scrape out the sides and the bottom to make sure everything is mixed perfectly.
Using a trigger releave icecream scopper, scoop out the batter in the prepared muffin tray. Tap the tray gently to remove excess air.
Place the cake pan in the center rack of the oven and bake the cake till well done or till a inserted tooth pick comes out clean.
Let the cupcakes cool down completely once done.
While the cake is cooling, prepare the "Whipped Cream Frosting".
Ingredients - 1 Cup Heavy Cream, 1 Cup Sugar, 3 Tbsp Instant Espresso | 1 Tbsp Coco Powder + Grated chocolate for garnish
Instructions - Take a chilled bowl, add heavy cream(chilled) and beat on high speed (using a electric hand mixer) till thick and creamy in consistency. Add in sugar, espresso, coco powder, vanilla essence. Continue mixing on high speed till thick and you have soft peaks.
Refrigerate to let the frosting set..
Once the cakes are at room temperature, spread the frosting evenly. Decorate with chocolate shavings.
