Methi Khichdi...

This one is our family favourite... It is energy booster specially for rainy season and ofcourse winters. Being made of any new rice in the market.
Star ingredient of this dish is "Fenugreek Seeds", thus called as "Methi Khichdi"
Prep Time - 30 Mins | Main Course, ideal for Lunch
Ingredients - 1 Cup New Rice | 1 Tbsp of slightly roasted Fenugreek Seeds | Salt To Taste || 1 Tsp of Kasuri Methi | 1/2 Cup Green Peas(Optional) | 1/2 Tsp Garlic-Garlic Paste | Pinch of Chili Flakes | Ghee i.e. Clarified Butter for cooking.
For Serving - Garlic-Cilantro Chutney
Instructions - Clean and wash the rice. Soak it in 2 Cups of water for 1 Hour. Add 1 Tbsp of ghee in Pressure Cooker. Once hot add 1 Tbsp of Fenugreek seeds, Kasuri Methi, pinch of chili flakes and leave it to cook on low flame else it will burn.
Add in ginger-garlic paste and saute it for 5 mins. Add in green peas and rice with enough water (1:2 Ratio). Give a good stir.
Let it simmer for 10 Min. Once it starts to boil, close the cooker lid. Cook for 15-20 Mins till 3-4 whistles.
Once done, turn off the flame. Let the cooker rest till all the steam is released. Serve hot with some more ghee, garlic-cilantro chutney and Lemon/Mango Pickle.
