Cauliflower Rice

Ingredients - 3 Cups Rice | 2 Cup Cauliflower Florets | 1 Cup Wattis GreenPeas | 1 Cup Carrots (Diced) | 1 Cup of green bell pepper | Oil/ghee for cooking | Basic whole garam masala _ cloves, black cardamom, green cardamom, tiny cinnamon stick , Bay Leaves, black cumin | A pinch of turmeric | Salt to taste. | Red Chili Flakes | 1 Cup sliced/diced Onions | 1 Tsp Ginger-Garlic Paste | 1/2 Tsp Green Chili Paste
For Garnish - chopped cilantro, slited green chilies | Lemon Juice
Instructions - Prep your veggies. rinse them thoroughly. Chop into bite size pieces.
Clean and wash the rice till you get crystal clear water. Soak for 30 Mins.
Heat Oil/ghee in a heavy bottom pan. Add whole garam masala and saute for 5 Mins. Once cooked remove it from the oil. Stir in 1 chopped onion, ginger-garlic paste, red chili flakes, green chili paste. Saute till you get a soothing aroma. Add in cauliflower florets and cook till tender. Add in remaining veggies and cook for another 10-15 Mins, till the oil separates out. Season with salt. Add soaked rice, enough water and mix well to combine everything.
Garnish with chopped cilantro/slited green chilies/lemon juice, raisins, cashew nuts and almonds (Optional).
Give a cook stir and bring to boil on high flame, with random stirring.
Once the water reduces, lower the flame to complete low and let the rice cook till completely done..
Serve as a side with your choice of gravy.
