Creamy Palak Paneer(Cottage cheese in Spinach Gravy)

Cottage Cheese cubes is cooked in blanched spinach puree, blended with some spices and finished with fresh cream and dollop of butter. This dish is super delicious, basically being originated from Northern India..
Ingredients - 2 Bunch of Spinach Leaves, with stems removed. | 2 Cups of Cottage Cheese(Paneer) | 2-3 Cloves of Garlic | Cumin Seeds | 2-3 Dried Red Chili | Garam Masala(Optional) | Fresh/Cooking Cream | Oil for Cooking | Pinch of Kasuri Methi | Salt To Taste | 3-4 regular chilies.
Instructions - Clean and wash the spinach leaves. Heat water in a saucepan with 1 Tbsp of salt. Bring to boil, add spinach leaves and blanch for 10-15 Mins. Preserve one cup of water and strain out the remaining water. Take ice cold water in a bowl. Add the spinach leaves to stop the cooking process.
In a pan, heat oil, add onions, green chilies, tomatoes and roast till tender. Let it cool down.. Blend together the onion mix and blanched spinach with little water to form a smooth puree(you can use the preserved 1 cup water).
In a wok, heat 1 tbsp of oil, add cumin, garlic and saute till the cumin seed starts to sizzle. Stir in the onion-tomato and spinach puree. Mix well and let it simmer till oil separates out.
In another pan add little oil and shallow fry the cottage cheese for a golden sear.
When the spinach puree starts to bubble up, add fried cottage cheese(Paneer), season with salt, sprinkle Kasuri Methi, 1 Tsp of Lemon Juice and finish with butter, fresh/cooking cream.
Mix well and serve hot with steamed rice.. It goes well with Butter Chicken and garlic naan as well.
