Fish/Prawns Fry
This is our family favourite spice mix for Fried Fish specially "Pomfret", "Humour" Or "KingFish" and Bombay Duck if easily available. It is perfect for Prawns as well.
To start off _ Clean and wash the fish. Gently rub Lemon Juice, Vinegar and Turmeric powder on the fish pieces and keep aside for 30 mins.
Wash again under tap water and keep it in a strainer to get rid of excess water.
In a mixing bowl, add -
* Carom Seeds(Ajwain) - 1 Tsp
* Grinded green chili & red chili - 1 Tsp
* Mango Powder - 1 Tsp
* Salt To Taste
* Ginger-Garlic Paste - 2-3 Tbsp
* Red Food Coloring
* A pinch of turmeric
* Grinded Cumin and coriander seeds
* Garam Masala(Optional)
Note - The measurements used above are for 1 KG Fish/Prawns
Using a spatula. mix everything to form a paste. Add the fish pieces and mix gently so that the mix is well coated with the fish.
Cover the bowl with a cling wrap and leave aside for good 4-5 Hours so that fish soaks up the spices really well.
Heat oil in a pan. Shallow fry the fish till well done.
Serve Hot with Peas Pulao Or Sticky rice. Both being excellent combination for Fried Fish.
