Hot & Sour Chicken Soup

This delicious Hot & Sour Chicken Soup is perfect for cold weather, easy to make, full of flavour and light on palate.
The use of pepper in this soup can give you ease if you severe cold.
Ingredients - 1 Cup Grated Carrot, Cabbage | 1 Cup Chopped Green Capsicum | 1 Cup Boiled & Shredded Chicken(Use chicken on bones for best flavour) | 1 tbsp Tomato Ketchup | 1 Can of Sweet Corn, Cream Style | 1/2 Cup Crushed Black Pepper | 1 Tsp Vinegar | 2 Tsp Soy Sauce |A pinch of Ajinomoto(Completely optional) | 2-3 Cubes of Chicken Stock | 3 Cups of Normal Room Temperature Water | 1 Tbsp Corn Flour dissolved in 1/2 Cup of water
Instructions - Add water in dutch oven dish. Turn on the gas flame and bring to boil.
Stir in the chicken stock cubes and left over stock of boiled chicken(if any). Once the cubes are diluted in the boiling water, add in the prepared vegetables and cream style corn.
Mix well and let it simmer on medium low flame for min 15 mins. Stir in shredded chicken along with vinegar, soy sauce.
Season with salt only if required as both chicken stock cubes and soy sauce is full of salt.
Stir in corn flour slurry to thicken the soup. Bring to boil and Serve Hot with toasted bread..

Note - You can omit the chicken for a vegetarian version.
Do not use excess water as this will make your soup liquidy. Just enough to cover the vegetables and shredded chicken. Best way is add all the ingredients in the dutch oven and then water__ only as per the requirement.
