Simple and Subtle cooking

Schezwan Fried Rice..

#Schezwan Fried Rice___A perfect meal to kill your hunger if you are running out of time or had a bad day at work and are in no mood of cooking.

It doesn't require much efforts if you have all ingredients in hand. I usually have my pantry full of all the ingredients used for Chinese Cooking.. It is always fun making this.

You need -

1 Cup Pre-Boiled Rice(Partially Cooked or any left over rice)

1 Cup Mixed Vegetables _ green capsicum, diced carrots, chopped spring onions, finely chopped french beans.

2 Scrambled eggs seasoned with Salt and Pepper.

1 Cup Shredded Chicken

1 Cup Green Peas(I use Wattis Green Peas, as it is very much sweet in taste and easily available in Local Super markets)

Oil for cooking

1 Tsp Vinegar

1 Tsp Soy Sauce

1 Tbsp Schezwan Sauce(Homemade OR Store Brought)

 

Prep - Heat oil in a wok and add roughly crushed one clove of garlic. Saute it till it is brown in color.

Remove from Oil and keep aside.

On high flame saute all the vegetables(accept spring onions and chicken). Season with vinegar, soy sauce. Cook till all the vegetables are tender.

Add cooked rice, shredded chicken, schezwan sauce, scrambled eggs, spring onion leaves and finely chopped onion bulbs.

Mix well so that everthing gets coated with the sauce.

Sprinkle water if required. Cover with lid and cook till rice is completely cooked.

Serve Hot with Manchurian Or Chili Chicken
