Beef Tahari

Another family fav' and must have weekend meal is "Tahari". Super simple to make with just minimal day to day ingredients.
Ingredients -
1 KG beef on bones | 1 KG Basmati Rice | 1 Cup Ginger-Garlic Paste | 1 Cup Yogurt | 5-6 Tomatoes_ thinly sliced | Whole Garam Masala _ Cloves, Cinnamon Stick, bay leaves, black peppercorn, black cardamom - 2-3 each. | 1/2 Tsp Shah zeera | 1 tbsp Kasuri Methi(dried fenugreek) | 3 Lemon Juice | Salt To Taste | 1 Cup coarsely grinded cilantro and 5-6 Green Chilies. | Mint Leaves + 1/2 Cup finely Chopped Cilantro for garnish
Instructions - Clean and wash the beef.
Preasure cook it with 1 Tbsp Oil, ginger-garlic paste, salt and turmeric, whole garam masala and yogurt... till 5-6 Whistles
Let it rest for 15 mins to remove the steam naturally.
In a heavy bottom pan, add 1/2 Cup oil and heat it.
Once the oil is hot, add shah zeera and kasuri methi and stir for about 5 mins till you get a soothing aroma.
Then add the cooked beef(without the stock) and saute for about 5-6 mins, Add yogurt, red chili powder, tomtatoes, paste of cilantro and green chilies. Mix well and let it cook till oil separates out and tomatoes are well cooked.
Them add in the soaked rice along with the preserved stock.
Mix well so that everything is well combined.
Garnish with some powdered garam masala, chopped cilantro, mint leaves and lemon juice.
Give a random stir, bring to boil and cook on high flame till the water reduces.
Once the water is reduce, cover the pot with lid and cook on low flame till rice is completely cooked.
Serve Hot With raita
